PROBLEM TO BE SOLVED: To provide a method capable of reducing bitter taste of food and drink with low cost and safety without spoiling taste which food and drink originally have, and to provide a bitter taste masking agent produced by the method.SOLUTION: A bitter taste masking agent mainly contains a yeast-derived peptide having the sum of composition ratios of a nonpolar side chain amino acid and a neutral side chain amino acid of 50 wt.% or more, and the yeast-derived peptide passes through an ultrafilter membrane having a molecular cutoff of 10,000, but does not an ultrafilter membrane having a molecular cutoff of 3,000. |
