The present invention provides a production method of low salinity fermented soybean paste which comprises the following steps: homogenizing culture liquid containing Aspergillus oryzae, Bacillus licheniformis, or a mixture thereof, and injecting the culture liquid to steamed soybeans by spraying; producing soybean blocks by culturing the soybeans inoculated with the culture liquid; crushing the soybean blocks, and adding salt to the crushed soybean block powder; and aging the soybean block powder with bay salt at room temperature. |
