PROBLEM TO BE SOLVED: To provide an unconventional and innovative manufacturing method of a bean paste-like food product from rice.SOLUTION: The manufacturing method of a bean paste-like food product from rice includes: heating raw material rice of nonglutinous brown rice or nonglutinous white rice under a pressure of 0.9 kg/cmto 1.1 kg/cm; swelling the rice under reduced pressure; pulverizing the swollen rice; adding water and saccharides to the pulverized rice;and kneading the rice. The product has a sugar degree (Brix) of 40% to 75%. |
