In a glucose isomerase enzyme preparation, at least a part of the glucose isomerase is of extracellular origin. The preparation may be derived from the growth of Streptomyces venezuelae or S. olivochromogenes. An especially useful nutrient contains both starch and xylose as carbon source. The medium may be centrifuged to remove cells and the enzyme precipitated with ammonium sulphate and conventionally purified.
