<P>PROBLEM TO BE SOLVED: To provide a method for producing pigmented rice by eliminating runoff of anthocyanin and including anthocyanin and GABA richly in the obtained pigmented rice. <P>SOLUTION: This method for producing the pigmented rice includes filtering or centrifugal separation treating treat water treating pigmented rice so as to remove microorganisms and a suspended matter, and repeatedly using the product as treat water of the pigmented rice. The treating process includes a washing process and a GABA accumulating process. Filtration is performed preferably by using a filtration device coated with a membrane filter or a filtration aid.
