摘要 <p>The invention relates to a starch-modifying process for foodstuff applications. According to the invention, the process consists of radio degradation at the ambient pressure and temperature, under an electron beam of 6 MeV, in the range of 10...50 kGy, at a dose flow-rate of 2 kGy/s, which induces the phenomenon of scission of the starch polymeric chain and formation of fragments of various molecular masses, to finally obtain modified starch having a gelling temperature of 56...69°C.</p>
