PROBLEM TO BE SOLVED: To provide noodles favorably loosened and improved in texture, especially multi-layer noodles.SOLUTION: The noodles are characterized in containing hemicellulase. The noodles are preferably multi-layer noodles, and in the multi-layer noodle, a layer constituting one side or both sides of an outermost layer of the multi-layer noodle is preferably a layer formed of noodle dough containing hemicellulase. As the multi-layer noodle, it is preferably a two-layer noodle having a bilayer structure and a three-layer noodle having a trilaminar structure. It is especially preferable that the noodles are the Chinese noodle. |
