摘要 A preparing method of aging black garlic according to the present invention comprises: a bulb garlic separating step of drying a bulb garlic for 10-12 days while supplying dried air having a drying temperature of 55°C-60°C and humidity of 10-15%, followed by separation into garlic pieces; a peel removing step of peeling the separated garlic pieces in a manner of high-pressure air injection to generate peeled garlic pieces; a low-temperature aging step of aging the peeled garlic pieces at a low temperature for 18-20 days under conditions of a temperature of -7°C to -10°C and humidity of 50-55%; a fermenting/aging step of fermenting and aging the peeled garlic pieces, which are subjected to the low-temperature aging step, at a temperature of 70-75°C for 13-15 days; a drying step of drying the peeled garlic pieces, which are subjected to the fermenting/aging step, at a temperature of 35-40°C to reach a moisture content of 17-20 wt%; and a medicinal herb coating step of spraying a medicinal herb extract on the dried garlic. The medicinal herb extract is prepared by decocting materials including Angelica, Astragali radix, Rehmannia glutinosa, licorice jujube, Paeonia japonica, cnidium, and Acanthopanax senticosus for 11-12 hours.
