PROBLEM TO BE SOLVED: To provide a method for producing enzyme-treated fish-and-shellfish extract enhanced in acidity and full-bodied taste in a good balance by using fish-and-shellfish extract as raw material, reduced in fishy smell and harsh taste peculiar to the raw material without imparting smell such as fermentation odor specific to lactobacillus fermentation or yeast fermentation, which spoils extract flavor, containing gluconic acid, suppressed in brownish discoloration/coloration, and having good flavor.SOLUTION: A method for producing enzyme-treated fish-and-shellfish extract includes: a process of adding a material obtained by using fish-and-shellfish extract as raw material and containing glucose; and a process of carrying out enzyme treatment using a glucose oxidase under an aerobic condition. |
