PROBLEM TO BE SOLVED: To provide a method of modifying a vegetable material in which the amount of a solute introduced in a cell wall can be increased.SOLUTION: A method of modifying a vegetable material 1 by introducing a solution in the temporary air gap 13 of a cell wall 12 through the cell lumen 11 of the vegetable material 1 in an impregnation process and then introducing a solute in the cell wall 12 by volatilizing a solvent in a drying process carried out successively to the impregnation process includes introducing the solute exceeding an amount calculated from the amount of a solution in the temporary air gap 13 of the cell wall 12 during the impregnation in the impregnation process into the cell wall 12 of the vegetable material 1 by controlling vapor pressure of a solvent in the environment 2 of the drying process and thereby regulating the solvent drying speed of the solution from the cell lumen 11.
