PROBLEM TO BE SOLVED: To provide a fishery paste product excellent in heat resistance, boiling resistance, freezing resistance, stability with time, texture and flavor without using a chemically synthesized starch.SOLUTION: A fishery paste product containing a moist heat treated tapioca starch includes: the moist heat treated tapioca starch having a viscosity difference of 200 BU or less between the maximum viscosity upon temperature increase from 50°C to 95°C and a viscosity upon reaching the temperature of 95°C when being determined by amylograph measurement in a solid concentration of 6.0 wt.%. |
