<P>PROBLEM TO BE SOLVED: To provide a control method of an aroma component capable of controlling the dissipation amount of the aroma component from a liquid food in a vacuum deairing process of the liquid food, and provide the liquid food manufactured by the control method. <P>SOLUTION: The dissipation amount of the aroma component is controlled by controlling numerical values except the volume of the liquid food (= volume/surface area = thickness of thickened liquid food) on a surface contacting a gas phase of the liquid food, or the size (particle size) of the atomized liquid food in the vacuum deairing process of the liquid food. Thus, the control method of the aroma component is obtained, which can reduce the dissolved oxygen level of the liquid food as well as control the dissipation amount of the aroma component, and the liquid food manufactured by the control method is obtained. <P>COPYRIGHT: (C)2012,JPO&INPIT |
