Provided are: a vacuum packaging method such that even if a liquid is contained in an object to be packaged, it is possible to sufficiently remove air without damaging the interior of a packaging bag (B), and it is difficult for air bubbles to remain within the packaging bag (B) after vacuum packaging; and a vacuum packaging device. In the vacuum packaging method, which vacuum packages an object to be packaged containing a liquid at a higher temperature than room temperature by means of a packaging bag (B), the object to be packaged is vacuum packaged through: a package depressurization step wherein, after depressurizing a chamber (2) interior to a pre-set second set pressure (P2), an object-to-be-packaged introduction opening (Ba) is closed within the chamber (2), and in such a state, the chamber (2) interior is depressurized to a third set pressure (P3) that is lower than the second set pressure (P2); a closing release step wherein, after the package depressurization step, the closed state of the object-to-be-packaged introduction opening (Ba) is released within the chamber (2); and a sealing step wherein, after the closing release step, the object-to-be-packaged introduction opening (Ba) is closed again, and the object-to-be-packaged introduction opening (Ba) is sealed in the closed state. |
