PURPOSE: A production method of red bean powder is provided to maintain the original color, taste, flavor, and nutrition of red beans. CONSTITUTION: Raw red beans are washed. The red beans and water mixed with refined salt are inserted into an electricity steam boiler in a weight ratio of 1:1. The red beans are boiled by steam generated from the water mixed with the refined salt for 50-60 minutes. The firstly boiled red beans are secondly boiled by steam generated from pure water for 15-25 minutes, in which the amount of the pure water is 30-40% of the water mixed with the refined salt. The boiled red beans are dried in a hot-air drier for 7-9 hours at 65-70°C to reduce the moisture content to 2-5%. The dried red beans are crushed into red bean powder with a particle size of 10-60 meshes using a crusher. |
