PROBLEM TO BE SOLVED: To provide an innovative and extremely practical method for producing puffed-rice food.SOLUTION: The method for producing puffed-rice food comprises: obtaining water-soaked rice 1 prepared by washing unpolished rice or polished rice to remove rice bran therefrom and soaking the thus treated unpolished rice or polished rice in water to increase a moisture content; obtaining dried cracked rice 2 prepared by drying the water-soaked rice 1 to make the rice have cracks K each having a depth from the surface of the grain of the rice toward the inside thereof, without pulverizing each grain of the water-soaked rice 1; and introducing the dried cracked rice 2 into an extruder 3 to produce the puffed-rice food 4. |
