PURPOSE: A roasting method of green coffee bean is provided to improve the uniform and quick roasting, unbalanced taste and aroma, and the reduction of acid component. CONSTITUTION: The roasting is performed by putting 50-500 parts by weight of far-infrared radiator per 100 parts by weight of green coffee bean in roasting space, and mixing at 200-220°Cfor 4-30 minutes. The sequence of the far-infrared radiator is one of the following procedures. Firstly the far-infrared radiator is put into the roasting space before preheating or heating the roasting space, and the green coffee bean is put while the temperature is maintained at 200-220°C. Firstly the green coffee bean is put into the roasting space preheated or heated at 200-220°C, and the far-infrared radiator is heated in the separated heating apparatus at 200-220°C and put into the space where the green coffee bean is put.
