PROBLEM TO BE SOLVED: To provide collagen-including acidic gel foods and drinks in combination with collagen at least one acidic polysaccharide selected from the group consisting of &kgr;-carrageenan, xanthan gum, gellan gum, alginic acids and pectin, neither forming aggregates nor inhibiting gelation, and having uniform texture and food feeling, thereby providing collagen-including acidic gel foods and drinks having various food feelings such as elastic food feeling.SOLUTION: At least one carrageenan selected from the group consisting of λ-carrageenan, ι-carrageenan, &kgr;2-carrageenan, and carrageenan containing a μ component and a &ngr; component, is used as the stabilizer. |
