<P>PROBLEM TO BE SOLVED: To color a fish meat sausage into a bright, light red even if it is subjected to a severe sterilization condition such as retort sterilization process. <P>SOLUTION: A fish meat sausage is colored using both gardenia red and lycopene that meet the following formulas 1 and 2: (Formula 1): 0.02≤A≤0.2; (Formula 2): 0.0003≤B/A≤0.1, wherein A is the amount (mass%) of addition of the gardenia red when color valency is converted to 50 and B is the amount (mass%) of addition of the lycopene. <P>COPYRIGHT: (C)2013,JPO&INPIT |
