The invention relates to the food industry, in particular to production of food products containing products from the processing of crops, and can find widespread use in the production of baked goods and confectionary, pasta, pizza, snacks, pancakes, pelmeni dumplings, breakfast cereals, dog food and other products. The claimed technical solution is directed to achieving a combined technical result: providing ease of process control, using scientifically based production process conditions, and producing a stable product quality with increased biological value of the end product. Said technical result is achieved by a process for soaking the grain, which process should not be brought to an end before the grain crushing strength is less than 11 kgf but more than 0.15 kgf, and the temperature during the soaking process should not exceed 45°C, wherein grinding of the grain is performed at a temperature for the mass emerging from the grinder of no more than 60°C. |
