<P>PROBLEM TO BE SOLVED: To fully retain generated carbon dioxide in a container, in producing jelly containing carbon dioxide by utilizing a reaction between a carbonate such as sodium bicarbonate and an acidulant such as citric acid. <P>SOLUTION: A jelly solution containing a carbonate is put in a container; cooled and gelled, with a solution containing an acidulant added thereon. Contact between the carbonate and acidulant can thereby be reduced, making the generation of carbon dioxide minimum at this point of time. The container is then sealed and soaked in hot water with a temperature not lower than a temperature at which a gelling agent is dissolved again. The gelling agent is thereby dissolved, and the carbonate and the acidulant are mixed for reaction to generate carbon dioxide in the container. The container is then soaked in cold water or the like to cause gelling, thus producing jelly containing sufficient carbon dioxide. <P>COPYRIGHT: (C)2013,JPO&INPIT |
