摘要 <p>Disclosed are a bubble-free high-speed vacuum stirring method for fruit juice/food and a stirrer therefor (1). The stirring method comprises: feeding articles to be stirred into a stirring cup (12) and switching on a power supply; sealing the stirring cup (12) and connecting a vacuum venturi (14); pressing a start button; beginning to measure air pressure in the stirring cup (12) with a system; starting operation of a vacuum pump (4); when the air pressure in the stirring cup (12) is lower than 300 mbar, starting to stir; finishing stirring and stopping operation of the vacuum pump (4); opening an air intake valve to allow air to return to the stirring cup (12); and ending stirring. According to the present application, the stirring process is carried out under vacuum conditions, and no air bubbles or only a few bubbles are formed, so the scenario of a large number of bubbles being mixed in the fruit juice/food is avoided. The present invention can produce smooth healthy beverages with fibers, and moreover has the advantage of reducing oxidation of food/fruit juice by air due to heating up under high speed.</p>
