PURPOSE: Makkoli(Korean rice wine) using apple juice is provided to ensure excellent flavor, color, and color. CONSTITUTION: A method for manufacturing apple makkoli comprises: a step of steaming rice, adding spawn, and preparing ipguk(Japanese koji); a step of adding yeast, lactic acid, and water to the ipguk and preparing crude liquor; a step of adding the ipguk and water and maturing as first mashing; a step of adding steamed rice, purified enzyme, and water and maturing as second mashing; a step of filtering to remove suljigemi(rice wine filter cake) and adding an apple concentrate, a sweetener, and water and filtering; and a step of sterilizing and injecting carbonic acid. |
