<P>PROBLEM TO BE SOLVED: To provide concentrated milk-like oil-in-water emulsified oil-and-fat composition having flavor and emulsion stability in cooling-freezing time while lowering costs. <P>SOLUTION: The concentrated milk-like oil-in-water emulsified oil-and-fat composition contains 5-65 wt.% of oil-and-fat and 0.5-35 wt.% of nonfat milk solid content. The oil-and-fat contains 90-100 wt.% of liquid oil-and-fat. The liquid oil-and-fat contains 50-100 wt.% of palm oil derived liquid oil-and-fat made by palm-based oil-and-fat as a main raw material containing 10-30 wt.% of glyceride with 1.9 or less of the weight ratio of SU2/UUU, 2 wt.% or less of the SSS content, and palmitic acid bonded to the 2-position. <P>COPYRIGHT: (C)2013,JPO&INPIT |
