PURPOSE: A manufacturing method of a cocoa butter equivalent or a cocoa butter improver is provided to manufacture the cocoa butter equivalent or cocoa butter improver with a method of manufacturing chocolate source oil and freely mixing the oil by the usage. CONSTITUTION: Fatty acid or fatty acid ester is mixed with oil to manufacture mixed oil. Transesterification is performed to the mixed oil by adding enzymes to 1, 3 specific positions from a temperature 20 deg. C lower to 20 deg. C higher than the melting point of the mixed oil based on the melting point of the mixed oil. By-products are removed by the molecular distillation and separation. The oil is any one selected from the group consisting of high oleic sunflower oil, high oleic rapeseed oil, safflower oil, rice oil, and olive oil.
