<P>PROBLEM TO BE SOLVED: To provide an emulsifying composition containing saponin of medicagenic acid skeleton by examining the structure of saponin of medicagenic acid skeleton, and a relationship between glycosilation of a sugar chain and emulsifying power to find out saponin of medicagenic acid skeleton having high emulsifying power, emulsifying stability and further other functions, and to provide food and drink and cosmetics using the emulsifying composition. <P>SOLUTION: The emulsifying composition contains at least one kind of oleanane type saponin that has medicagenic acid expressed by chemical formula 1 as a basic skeleton. In the chemical formula 1, R<SB POS="POST">1</SB>and R<SB POS="POST">2</SB>are each a sugar chain group or hydrogen atom, R<SB POS="POST">3</SB>and R<SB POS="POST">4</SB>are each a sugar chain group or hydrogen atom or alkyl, and either one of R<SB POS="POST">1</SB>-R<SB POS="POST">4</SB>is the sugar chain group. <P>COPYRIGHT: (C)2013,JPO&INPIT |
