<P>PROBLEM TO BE SOLVED: To provide an acid oil-in-water emulsion food excellent in high viscosity and heat resistance. <P>SOLUTION: The acid oil-in-water emulsion food is produced by adding 1,000-10,000 IU/kg of phospholipase A2 to liquid egg containing yolk, sterilizing the product, and emulsifying an oil phase and a water phase using the liquid egg as an emulsifier. It is preferable to include 0.1-1.0 mass% of sodium glutamate and/or 1-15 mass% of albumen (in terms of raw albumen). <P>COPYRIGHT: (C)2010,JPO&INPIT |
