PURPOSE: A method for preparing 10-hydroxystearic acid is provided to obtain 10-hydroxystearic acid of high yield and to use 10-hydroxystearic acid as a starting material of lactone synthesis. CONSTITUTION: A method for preparing 10-hydroxystearic acid from unsaturated fatty acid comprises a step of treating a substrate with oleate hydratase derived from Stenotrophomonas maltophilia. The enzyme has an amino acid sequence of sequence number 1. The substrate is oleic acid. A composition for preparing 10-hydroxystearic acid from unsaturated fatty acid contains the enzyme as an active ingredient. The composition further contains surfactant. A recombinant vector for preparing 10-hydroxystearic acid contains a gene of sequence number 2 encoding the enzyme.
