Provided is a method for selectively N-acylating an amino triol to produce an N-acylated amino triol efficiently and by a technique that is industrially advantageous. A method for producing an N-acylamino triol represented by formula (1), the method being characterized in that an amino triol and a fatty acid ester are reacted in the presence of a basic catalyst in ethanol and/or methanol.
