A method for determination of benzoates in fruit juice includes sampling, preparation of sample, carrying out chromato-spectrophotometric study, evaluation of results. In the sample one measures redox-potential at pH=3, with comparison of its value to redox-potential of the system “ascorbic acid – dehydroascorbic acid” at same value of active acidity, with determination of presence of benzoic acid and products of its interaction with substances of redox-system of juice, in particular benzyl alcohol or toluene, depending on term of storage of juice and the value of its redox-potential. |
