<P>PROBLEM TO BE SOLVED: To provide a fryer that can suppress deterioration in cooking oil due to local heating of the cooking oil or carbonization of frying remnants by the local heating. <P>SOLUTION: An oil tank 11 which is filled with the cooking oil and fries cooking ingredients, heating parts 31, 91, and a fryer 10 which heats the cooking oil with a heat carrier in the heating parts 31, 91 are provided. The fryer 10 includes a heating device 41 for heating the heat carrier, and uses a heat exchange oil as the heat carrier. The heating parts 31, 91 and the oil tank 11 are sectioned through boundary walls 12, 93, and performs heat exchange of the cooking oil in the oil tank 11 and the heat exchange oil in the heating parts 31, 91 through the boundary walls 12, 93 to heat the cooking oil.
