PURPOSE: Red pepper paste using persimmon skins, and a producing method thereof are provided to recycle the waste persimmon skins, and to improve the flavor and taste of the red pepper paste. CONSTITUTION: A producing method of red pepper paste using persimmon skins comprises the following steps: mixing hard-boiled rice and a malt extract for saccharifying, and filtering and concentrating the saccharified solution to obtain glutinous rice syrup; drying the persimmon skins, and crushing into powder; mixing 18-38wt% of glutinous rice syrup, 10-27wt% of red pepper powder, 20-40wt% of persimmon skin powder, 8-23wt% of saccharified glutinous rice solution, 3-11wt% of fermented soybean powder, and 2-11wt% of salt; and aging the mixture for 3-5 months. |
