The invention relates to a compound having general formula (I) or one of the salts thereof, in which: R1 represents CH2OH o COOH and R2 represents a linear or branched hydrocarbon chain C4-C22, wherein the hydrocarbon chain can optionally have one or more unsaturations selected independently from alkenyl- or alkynyl-type unsaturations, provided that, when R1 represents CH2OH and R2 represents a linear or branched hydrocarbon chain, optionally with one or more alkenyl unsaturations, the length of the hydrocarbon chain is C4-C12. The invention also relates to the production method thereof and to the use of same as a surfactant and oxidising agent, in particular as part of a composition in the form of an emulsion.
