<P>PROBLEM TO BE SOLVED: To provide a texture-improving agent for solid caramel, effective for producing the solid caramel which can easily crisply be bitten and hardly absorbs moisture. <P>SOLUTION: The texture-improving agent for the solid caramel is characterized by containing one or two or more emulsifiers selected from the group consisting of polyglyceryl-condensed ricinoleate ester, polyglyceryl fatty acid esters, and sucrose fatty acid esters in the solid caramel. <P>COPYRIGHT: (C)2013,JPO&INPIT |
