摘要 PURPOSE: Rice punch yogurt containing soymilk having excellent nutrition, and a producing method thereof are provided to use the soymilk and mal to obtain rice punch containing the soymilk, and fermenting the rice punch with lactic acid bacteria. CONSTITUTION: A producing method of rice punch yogurt containing soymilk comprises the following steps: processing the soymilk with protease; mixing the protease-processed soymilk with malt powder, and separating the mixture into precipitates and supernatant; adding cooked glutinous rice into the supernatant, and saccharifying the mixture to obtain rice punch containing the soymilk; and adding lactic acid bacterial into the rice punch containing the soymilk, and fermenting the mixture.
