PURPOSE: A producing method of candied garlic chips without spicy taste is provided to improve the palatability of the candied garlic chips by removing the unique garlic smell. CONSTITUTION: A producing method of candied garlic chips comprises the following steps: slicing garlic into the thickness of 0.5-0.8cm; parboiling the garlic slices in 95-100 deg C water for 10-60 seconds; cooling the parboiled garlic slices in 10-30 deg C water, and removing the moisture; aging the garlic slices in a vinegar solution with salt for 3-4 days; washing the aged garlic slices using the 10-30 deg C water; boiling the washed garlic slices in soaking syrup; drying the candied garlic chips using 30-50 deg C hot air; and separating each garlic chips. |
