PURPOSE: An additive composition for salted food, a producing method thereof, and the salted food using thereof are provided to use a lacquer extract to improve the freshness of the salted food. CONSTITUTION: A producing method of an additive composition for salted food comprises the following steps: cutting lacquer and Phragmites communis into 3-7cm; mixing the crushed lacquer and the Phragmites communis in a weight ratio of 1:0.8-1.2, and hot-water extracting the mixture using 4-6% concentration salt water; producing a medium using the extract; injecting spawns to the medium, and fermenting the medium at 50-70 deg. C for 35-45 hours; and refining the medium with a filter press.
