FIELD: food industry. ^ SUBSTANCE: inventions are intended for usage in food industry for preparation and application of a packed concentrate in the form of jelly. The packed concentrate contains 20 - 80 wt % of water, 0.5 - 60 wt % of components imparting taste, 3 - 40 wt % of salt in conversion to the concentrate moisture content and 0.5 - 4 wt % of a jellying agent including konjac mannan and optionally - one or more other jellying agents in conversion to the concentrate moisture content. The method involves stages of mixing all the ingredients, dispensing/dosing the mixture into a package, the package closing; heat treatment is performed before and/or in the process of and/or after dispensing/dosing into the package. ^ EFFECT: invention ensures quick dissolution of the concentrate in boiling water, the concentrate is highly stable during transportation and storage. ^ 15 cl, 1 tbl, 6 ex |
