PURPOSE: A producing method of blue crab kimchi without the bad smell and the fishy taste is provided to use blue crab and blue crab stock to produce kimchi spice. CONSTITUTION: A producing method of blue crab kimchi comprises the following steps: mixing 10,000-12,000 parts of water by weight, 1,000-3,000 parts of blue crab by weight, 100-300 parts of dried walleye by weight, 150-210 parts of anchovy by weight, 100-140 parts of onion by weight, 700-900 parts of radish by weight, 40-60 parts of spring onion by weight, 40-60 parts of sea tangle by weight, 40-60 parts of shrimp by weight, 40-60 parts of Lentinus edodes by weight, and 130-160 parts of germinated brown rice by weight; boiling the mixture at 100-110 deg C for 2-5 hours to obtain blue crap stock; adding seasonings and wild grass enzymes into the stock; and inserting cut blue crab into the mixture to obtain kimchi spice, and producing the kimchi using the spice.
