<P>PROBLEM TO BE SOLVED: To provide an eating quality improving agent in a chocolate product. <P>SOLUTION: The eating quality improving agent contains (a) free glutamic acid of 10 wt.% or more (preferably 15 wt.% or more) in an equivalent amount of sodium glutamate, (b) 5'-disodium inosinate and 5'-disodium guanylate of 1 wt.% or more (preferably 1.5 wt.% or more) in a total amount, and (c) an yeast extract containing 2-furanmethanol and/or 5-methyl-2-furanmethanol as active ingredients. <P>COPYRIGHT: (C)2012,JPO&INPIT |
