A method for making quince chips comprises washing, cutting, treating, convective drying of raw material, cooling and packing. Prior to drying thermal steam treatment of the quince is carried out at a temperature of 75…88 °C with an exposure of 30…60 s, and the drying is carried out up to the residual moisture content not exceeding 8 % in the regime of double-staged dehydration. In doing so at the first stage at a temperature of a carrier of 65…95 °C up to the moisture content of the material equilibrium with the environment, and at the second – of 55…60 °C. |
