FIELD: food industry. ^ SUBSTANCE: invention is intended for usage in preservation industry. The method for production of pear and quince compote in jar SKO 1-82-500. The method envisages fruits pouring with 85C hot water for 2-3 minutes, subsequent replacement of the water with 97-98C syrup. Then the jars are sealed, put into the carrier ensuring mechanical air-tightness of the jars, sequentially heated in a 120C air flow at a rate of 5-6 m/s during 10 minutes and showered with 100C water during 15 minutes. Then one performs staged cooling in baths filled with 80C water for 4 minutes, with 60C water for 4 minutes, with 40C water for 5 minutes. During the whole process of heat treatment the jars are turned upside down with a frequency equal to 0.133 s-1. ^ EFFECT: invention ensures thermal energy saving and the ready product quality enhancement due to heat treatment duration reduction and uniformity. |
