PURPOSE: A method for making functional refined rice wine(Yakju) using bamboo leaves is provided to improve the wine color and storage property and to enhance mineral content. CONSTITUTION: A method for making refined rice wine containing bamboo leaves comprises: a step of preparing distiller's grains using ipguk(Japanese koji), yeast, purified enzyme; a step of preparing crude liquor using rice as a main ingredient; a step of performing first smashing; a step of soaking processed bamboo leaves or bamboo powder in the water and soaking barley and mung beans in the water; a step of adding the soaked water to the liquor; and a step of maturing in a maturing tank at low temperature for 7-14 days. |
