PURPOSE: Fermented soybean paste using acer mono max sap, and a producing method thereof are provided to improve the taste and the flavor of conventional fermented soybean paste using the acer mono max sap and aspergillus oryzae strains. CONSTITUTION: A producing method of fermented soybean paste using acer mono max sap comprises the following steps: steaming soybeans soaked in water for 24 hours at 100 deg C for 5 hours; injecting aspergillus oryzae strains into the steamed soybeans after cooling at 60 deg C and crushing; molding the soybean mixture into 1kg size to obtain soybean blocks; drying the soybean blocks at 45 deg C for 30 days; mixing the acer mono max sap with 20% salt water, and dipping the soybean blocks into the acer mono max sap mixture for fermenting for 40 days; and separating soy sauce from the mixture, and crushing the fermented soybean blocks before fermenting in the shade for 70 days.
