<P>PROBLEM TO BE SOLVED: To provide a peptide having an enzymatic activity converting tuliposides to tulipalins by obtaining gene segment of a tuliposide A converting enzyme a polynucleotide coding the same, and a method for preparing a recombinant enzyme in which an enzyme source is not derived from plant bodies. <P>SOLUTION: Escherichia coli bacteria exhibiting vector are is constructed in which a histidine tag is added to an N terminal in a mature polypepitide code area removing signal peptides of a peptide coding area of an enzyme gene by obtaining the gene segment expected to code the tuliposide A converting enzyme derived from tulip petals.
