STABILIZED ENZYME COMPOSITION AND METHOD FOR PRODUCING SAME

An enzyme composition which scarcely cakes or deliquesces, shows a regulated decrease in enzymatic activity and can be stored over a prolonged period of time without a need for an oxygen scavenger, vacuum packaging or the like. This enzyme composition can be obtained by spray drying a solution containing an enzyme such as transglutaminase, said enzyme suffering from a decrease in the enzymatic activity thereof by oxidation, and a specific substance (a stabilizing material) such as agar.
