PURPOSE: A method for manufacturing vinegar is provided to make vinegar using the natural medicinal materials and to improve taste, flavor, and entire preference. CONSTITUTION: A method for manufacturing vinegar comprises: a step of adding Achyranthis Radix, Acanthopanax senticosus, Polygoni multiflori Radix, Eucommia ulmoides, safflower seed, Gastrodiae Rhizoma, Taraxacum platycarpum,Paeonia japonica, Atractylodis Rhizoma alba, Cnidii Rhizoma, Lycii Fructus, and Plantago asiatica in distilled water and heating for 12-60 hours; a step of dipping unpolished rice into water for 1-2 hours and sieving; a step of pulverizing at 30-80 meshes; a step of adding pulverized unpolished powder and nuruk and mixing to prepare crude liquor; a step of adding Achyranthis Radix, Acanthopanacis Cortex, Polygoni multiflori Radix, Eucommia ulmoides, safflower seed, Gastrodiae Rhizoma, dandelion, Paeonia japonica, Atractylodis Rhizoma alba, Cnidii Rhizoma, Lycii Fructus, Caragana sinica flower, Rehmanniae Radix crudus, Plantago asiatica, and Chinese quince and heating for 12-60 hours; a step of dipping unpolished rice in the water for 1-2 hours and removing water; a step of pulverizing at 30-80 mesh; a step of performing alcohol fermentation at 23-28°C for 4-6 days; a step of adding lactic acid bacteria and fermenting for 1-3 months; and a step of maturing the resultant for 6-18 months. |
