摘要 <P>PROBLEM TO BE SOLVED: To provide an efficient method for producing an optically active cyanohydrin, which can be accumulated in high concentration, and to provide a safe method for producing an optically active &alpha;-hydroxy carboxylic acid in high yield. <P>SOLUTION: The method for producing the optically active cyanohydrin comprises an enzymatic reaction carried out in the presence of an organic solvent substantially immiscible with water by using an aromatic aldehyde and HCN as substrates. The method for producing the optically active cyanohydrin is characterized in that a hydroxynitrile lyase prepared by using a genetically recombined organism as an enzyme, and a state in which the molar concentration of the aromatic aldehyde in a reaction solution is &le;0.4 mol/kg and not higher than the molar concentration of the HCN is maintained for &ge;2 hr at a reaction temperature of -10 to 40&deg;C at pH 4.0-7.0, thereby accumulating the optically active cyanohydrin having optical purity of &ge;90% e.e. in an amount of &ge;35 wt.% in a reaction system. <P>COPYRIGHT: (C)2012,JPO&INPIT
