PURPOSE: A ginseng fermented product containing an organism converted compound K, a producing method thereof, and functional ginseng rice wine using thereof are provided to enable saponin inside ginseng to be easily absorbed to human bodies. CONSTITUTION: A ginseng fermented product includes a saponin metabolite containing a compound K(20-O-beta-Dglucopyranosyl-20(S)-protopanaxadiol) obtained by organism converting saponin contained in ginseng using aspergillus oryzae as fermentation strains. The saponin is converted into the saponin metabolite by inserting the ginseng into a culture medium for the aspergillus oryzae. |
