<P>PROBLEM TO BE SOLVED: To provide a deep fryer quickly adjusting the temperature of oil, especially cooling of the oil, without changing an oil level in a deep frying tank, and further filtrating high-temperature oil. <P>SOLUTION: The deep fryer includes: the deep frying tank 3 including a heating device 4; an oil storage tank 5 aligned with and disposed near the deep frying tank and having a predetermined opening; and a communication pipe 6 for communicating between the oil storage tank and the deep frying tank. The deep frying tank and the oil storage tank have communication pipe-connecting positions at bottom surfaces. Accordingly, the deep fryer has substantially the same oil levels in both tanks opened under atmospheric pressure, the oil is moved from the oil storage tank to the deep frying tank, and even if additional oil is poured, the oil is moved through the communication pipe, and the heights of oil levels of both tanks are substantially equalized again.
