PURPOSE: A producing method of beef bone soup(gomtang) is provided to additionally supply vegetable protein and amino acid when adding fermented soybean paste powder. CONSTITUTION: A producing method of beef bone soup(gomtang) comprises the following steps: inserting beef bones to water, and heating to obtain a hot water extract; and adding protease to the extract and reacting for 2 hours. The hot water extract is obtained by heating the beef bones inside the water for 1~3hours in 110~130deg c. The protease is either protamax or flavourzyme. |
